fasolatha (vegan)

Servings: 6

Ingredients:

1 cup white kidney beans

1 onion, thinly sliced

2 small carrots, sliced

1 stalk celery, chopped

1 (14.5 ounce) can diced tomatoes

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 cup olive oil

3 cups water

2 tablespoons chopped fresh parsley

salt to taste

ground black pepper to taste

Directions:

1. Rinse and strain soaked beans. Place in a large saucepan, and cover with water. Boil for 2 to 3 minutes. Drain, discarding the water.

2. Cover the beans with 3 cups water, and bring to a boil. Add onions, carrots, celery, tomatoes, tomato paste, oregano, thyme, olive oil, and salt and pepper. Cover. Cook for about 50 to 60 minutes, until the beans are soft. Mix the parsley.

3. If using a pressure cooker, cook all ingredients except parsley for 3 to 4 minutes under 15 pounds pressure. Stir in parsley.

chef chloe’s mac and cheese

If you’re attending a BBQ or potluck, you may want to share this yum-looking mac ‘n “cheese” by Chef Chloe. I haven’t tried this recipe yet, but it looks like a nice dish to share with flirts or anyone who has never had the pleasure of vegan comfort food!

Prep time: 5 minutes |Cook time: 20 minutes |Total time: 25 minutes |Servings: 4
•1 lb. elbow macaroni or piccolini
•3 cup(s) of broccoli florets
•1/4 cup(s) of vegan margarine
•1/3 cup(s) of all-purpose flour
•3 cup(s) of soy, almond, or rice milk
•1/2 cup(s) of nutritional yeast
•2 tbsp. of tomato paste
•2 tsp. of salt
•1 tsp. of garlic powder
•1 tbsp. of lemon juice
•1 tbsp. of agave syrup

Steps
1.Bring a large pot of heavily salted water to a boil
2.Add macaroni and cook according to package directions
3.Add broccoli for the last five minutes of boiling and let cook until broccoli is fork tender
4.Drain and return to pot
5.In a medium saucepan, make a roux or paste by whisking the margarine and flour over medium heat for 3 to 5 minutes
6.Add nondairy milk, yeast, tomato paste, salt, and garlic powder to the saucepan and bring to a boil, whisking frequently
7.Reduce heat to low and let simmer until the sauce thickens
8.Adjust seasoning to taste and stir in lemon juice and agave
9.Toss the noodles and broccoli with the sauce and serve immediately

smoked cheddar potatoes au gratin

Smoked Cheddar Potatoes Au Gratin hero

serves 4 to 6

Ingredients

    3 large russet potatoes, skin on
1/2 red onion, thinly sliced
4 garlic cloves, minced
4 ounces grated smoked cheddar cheese
16 ounces cream
2 teaspoons nutmeg`
salt and freshly ground black pepper
1 teaspoon dried thyme

Preparation

Scrub potatoes well and dry off with a kitchen towel. Thinly slice potatoes lengthwise with a mandoline, just over the 1/8-inch mark, and put into a large bowl. Add chopped onions, minced garlic and the smoked cheddar. Toss to mix, add cream and toss again. Season mixture to taste with nutmeg, salt, pepper and thyme, and mix well. Make sure cheese and seasonings are distributed evenly, and potatoes are coated with cream.

Transfer mixture to an ovenproof baking dish that will hold potatoes in a layer 2 1/2 to 3 inches thick. We used an 8-inch square glass pan and they just fit. Press potatoes down evenly, making sure everything is covered with cream. Bake at 400 degrees for about 1 hour, or until fork tender, browned and bubbly.

mulled cider (vegan)

Ingredients:

2 qts. apple cider
1/4 cup packed brown sugar
1/8 tsp. ground ginger
1 orange (unpeeled)
2 cinnamon sticks
1 tsp. whole cloves
brandy

Preparation:
Combine cider, sugar, ginger and orange in slow cooker. Tie cinnamon and cloves in a small cheesecloth bag; add to crockpot. Cover and cook on LOW 2 to 4 hours. The entire house will smell great! Remove the bag of spices. In a mug put a shot of brandy, then fill with hot mix from cooker.
Makes 10 to 12 servings

 

Note: too sweet. reduce sugar.

roasted potatoes and onions (vegan)

Serves 6

Ingredients

* 1 1/2 pounds Dutch Yellow Potatoes (cut into 1 and half inch cubes)
* 1 1/2 bag
* 1/4 cup Olive Oil
* To Your Taste Salt
* To Your Taste Pepper
* Til Desired Watercress Or Italian parsley

Directions

In a large baking dish, combine potatoes and onions with olive oil. Spread out in an even layer. Bake in a 350 degrees preheated oven stirring every 15 minutes or until golden brown. Transfer vegetables into a serving bowl. Season with salt and pepper. Garnish with watercress or Italian parsley.
